WHO MAKES THE BEST LOBSTER ROLL?


You can drive out to Montauk or hop from one place to the next right here in Huntington and sample lobster rolls. DJ’s Clam Shack, Kerber’s Farm and Prime are three places making the local Top 10 list. Even better, prepare your own lobster roll. It’s simple, quick and has the right amount of ingredients to your personal taste. It’s a Summer favorite, a wonderful lunch or an extra special treat at a barbecue for family and friends. The great debate is whether to serve a classic New England/Maine style lobster roll with mayo and lemon or the Connecticut style with warm butter, or a combination of both. Serve with some fresh corn on the cob or chips from the North Fork.


Fresh lobster – A 1lb lobster yields 3-3 ½ oz of lobster meat

Steaming, rather than boiling is a more gentle technique and yields more tender meat. It also preserves the flavor. Steam your lobsters for about 10-12 minutes for 1 -1/4 lb lobsters, making sure that the lobsters are not overcrowded and you move them around on the steaming rack. Let them cool and remove the meat from the tail, claws and if you are inclined, the legs.





Ingredients: - serving for 2 rolls

Classic New England Lobster Roll: Connecticut style Lobster Roll:

1. Lobster meat – 8 oz. 1. Lobster meat – 8 oz.

2. 2 tbsp of butter 2. 4 tbsp of butter

3. 1 ½ tbsp of mayonnaise 3. ½ lemon

4. 1 tbsp of Dijon mustard 4. Minced celery

5. ½ lemon 5. Chopped chives

6. Minced celery 6. Salt and pepper

7. Chopped chives 7. Soft, split top buns

8. Salt and pepper

9. Soft, split top buns


Directions:

1. In a mixing bowl, put in the lobster meat cut in chunks and minced celery.

2. Mix in a small bowl the rest of the ingredients, depending on which style you are making.

3. Add to it if you like, but you don’t want to overwhelm the lobster flavor with dressing.

4. Mix the dressing with the lobster meat.

5. Heat the bun slightly.

6. Lightly dress the inside of the bun with some melted butter.

7. Fill the bun generously, sprinkle with cut chives and serve.
